Cheddar & Caramelized Onion Deviled Eggs
Deeply caramelized onion and sharp cheddar filling topped with a golden crispy onion ring — two completely different expressions of onion in one egg.

Ingredients
- 12 large eggs
- 12 egg yolks
- 2 tablespoons cream cheese, softened
- 2 tablespoons mayonnaise
- 3 tablespoons sharp cheddar, very finely grated
- 3 tablespoons deeply caramelized onion, finely chopped (from 2 large onions)
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Salt and black pepper
- 1 large onion, sliced into thin rings
- ½ cup seasoned flour (salt, pepper, paprika)
- Neutral oil for frying
- Caramelized onion, shaved cheddar, fresh thyme, flaky salt for garnish
Instructions
- Caramelize onions: cook sliced onions in butter over medium-low heat for 45–60 minutes until deeply golden and jammy. Cannot be rushed. Season with salt, cool, and chop finely.
- Make crispy onion rings: dredge thin rings in seasoned flour. Fry in neutral oil at 375°F until deeply golden and crispy. Drain.
- Mash yolks smooth. Beat in cream cheese, mayo, cheddar, caramelized onion, Dijon, Worcestershire, salt, and pepper.
- Pipe into whites. Top with crispy onion ring, caramelized onion, shaved cheddar, fresh thyme, and flaky salt.
Tips
- The caramelized onion cannot be rushed — plan for a full hour.
- You get two completely different expressions of onion in one egg: caramelized inside, crispy fried on top.
- Sharp cheddar over mild — you want the cheddar to be a flavor, not just a texture.
