Ingredients
- 12 large eggs, hard-boiled and peeled
- 2 tablespoons mayonnaise
- 2 tablespoons cream cheese, softened
- 2 tablespoons buttermilk
- 1–2 chipotle peppers in adobo sauce, finely minced
- 1 teaspoon adobo sauce (from the can)
- 1 teaspoon fresh chives, sliced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried parsley
- Salt and white pepper to taste
- Crushed tortilla chips for topping
- Smoked paprika and chives for garnish
Instructions
- Mash yolks completely smooth. Beat in mayo, cream cheese, and buttermilk until creamy.
- Fold in minced chipotle, adobo sauce, chives, garlic powder, onion powder, and parsley.
- Season with salt and white pepper. Adjust chipotle to your heat preference.
- Pipe into whites. Top with crushed tortilla chips, a dusting of smoked paprika, and chives.
