Loaded Baked Potato Ranch Deviled Eggs
Everything you want on a loaded baked potato — sour cream, cheddar, bacon, chives — merged with a buttermilk ranch cream filling. Topped with crispy potato skin pieces that deliver the best part of the baked potato in every bite.

Ingredients
- 12 large eggs, hard-boiled and peeled
- 1 medium russet potato
- 4 strips thick-cut bacon
- 2 tablespoons mayonnaise
- 2 tablespoons cream cheese, softened
- 2 tablespoons sour cream
- 1 tablespoon buttermilk
- 2 tablespoons sharp cheddar, very finely grated
- 1 teaspoon fresh chives, sliced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- Extra cheddar, bacon crumble, sour cream, and chives for topping
Instructions
- Bake the russet potato at 400°F until fully cooked, about 1 hour. Cool. Scoop out the flesh (reserve for another use or mash into filling). Rub skin with oil and salt, return to oven until deeply crispy, 15–20 minutes. Break into small irregular pieces.
- Cook bacon until deeply crispy. Drain and crumble.
- Mash yolks completely smooth. Beat in mayo, cream cheese, sour cream, and buttermilk until creamy.
- Fold in grated cheddar, chives, garlic powder, onion powder, and half the bacon. Season with salt and pepper.
- Pipe into whites. Top with crispy potato skin, bacon crumble, a tiny dollop of sour cream, grated cheddar, and chives.
Tips
- The crispy potato skin topping is the whole point — don't skip it or substitute with chips. It tastes like the best part of a baked potato.
- Grate the cheddar yourself; pre-shredded cheddar has coatings that prevent it from incorporating smoothly.
- A small amount of the baked potato flesh mashed into the yolk filling adds a subtle starchy richness.
