Makes 12 halves
Ingredients
- 12 large eggs
- 12 egg yolks
- 3 tablespoons mayonnaise
- 2 tablespoons Sriracha
- 1 tablespoon honey, plus more for drizzle
- 1 teaspoon rice wine vinegar
- ½ teaspoon sesame oil
- 8–10 sesame crackers, broken into rough pieces
- 1 teaspoon toasted sesame seeds + pinch flaky salt
- Extra Sriracha drizzle, sesame seeds, scallion, flaky salt for garnish
Instructions
- Make sesame cracker crumble: break crackers by hand into rough irregular pieces. Toss with sesame seeds and flaky salt.
- Mash yolks smooth. Beat in mayo, Sriracha, honey, vinegar, sesame oil, and salt until creamy. Taste and adjust.
- Pipe into whites. Top with sesame cracker pieces, a Sriracha drizzle, honey drizzle, sesame seeds, scallion, and flaky salt.
Tips
- Balance is everything — Sriracha and honey should be equal partners. Taste and adjust until neither dominates.
- Sesame oil in the filling ties the sesame cracker garnish to the filling below.
- A finishing drizzle of both Sriracha and honey makes this the most visually appealing of the classics.
