Ingredients
- 12 large eggs, hard-boiled and peeled
- 12 egg yolks
- 3 tablespoons mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon white wine vinegar
- ½ teaspoon sugar
- Salt and white pepper to taste
- 2 tablespoons capers, patted completely dry
- Neutral oil for frying
- Smoked paprika, fresh chives, flaky sea salt for garnish
Instructions
- Fry the capers: pat completely dry. Heat ½ inch oil over medium-high. Fry until they burst open and crisp, about 60–90 seconds. Drain.
- Mash yolks smooth. Beat in mayo, mustard, vinegar, sugar, salt, and white pepper until silky.
- Pipe. Top with smoked paprika, crispy capers, chives, and flaky salt.
